The first step in creating this, you'll need to add your wet ingredients. Pour the Red Miso Paste into the bowl that gives a sweet and savoury mix. To that add the soy sauce, sesame oil, fish sauce (an Asian seasoning) and some water at the end. You then want to beat the ingredients together in the bowl until the miso paste has dissolved. Next, you want to grate some garlic and add that to the mix. Grating your garlic is the best method suggested by chef Ian as you get no waste and a beautiful paste. This also helps to release the oils in the garlic where all the flavour can be found. Next, you'll want to add the ginger and the best way to peel it is simply by using a teaspoon and pull the skin back. Just like the garlic, you will grate the ginger to release all those amazing oils. Add a teaspoon worth of ginger to the mix and give the bowl a little whisk. Then have a little taste to see how the seasoning is coming along. Just at the end, you will want to add some lime juice which is going to help elevate the dish. To juice, your lime cut it in half and hold your citrus fruit in your hand over the bowl. Then place a fork in the lime and squeeze three times and twist three times to get all the juice out. Finally, have a quick mix through with the lime juice. And that is your delicious dressing complete, no need to add any extra seasoning as it's perfect the way it is.
