Soft Ginger Cookies 3/4 cup butter, softened 1 cup sugar 1 egg 1/4 cup molasses 2 3/4 cups all-purpose flour 2 tsp ground ginger 1 tsp baking soda 3/4 tsp ground cinnamon 1/2 tsp ground cloves 1/4 tsp salt additional sugar for rolling the cookies Preheat oven to 350°. Using an electric mixer, cream together the butter and sugar for two to three minutes, scrapping the bowl. Add the egg and molasses, beating well; and scrapping the bowl. In a large bowl, whisk together the remaining dry ingredients. Gradually add the flour mixture to the butter/sugar mixture, beating just until combined. Scoop dough into balls and roll the balls in the additional sugar. Place on a parchment paper lined cookie sheet and bake 12-14 minutes. Do not over bake.
