Baking Instructions: • Preheat the oven to 350°F (175°C). • Prepare two 8–9 inch cake pans with high sides, as the batter rises quite a bit. • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. • Tip: For flatter, more even cake layers with minimal cracking, wrap the pans with cake strips. If using cake strips, extend the baking time by about 10 minutes. Ganache Frosting: • 2 bars dark chocolate (70% cocoa or higher) – about 7 oz total (200 g) • 1 cup heavy cream (at least 33% fat) (240 ml) • 2 tablespoons honey (optional) (40 g) For thicker layers of ganache: Use 3 bars of chocolate (10.5 oz / 300 g) and 1½ cups cream (360 ml)
