Hello my friends, welcome to my Southern Kitchen! Y’all know how much I love Rice and it is one of my favorites, so today I am making a delicious and flavorful Rice side dish, Louisiana Vegetarian Dirty Rice! A Creole and Cajun classic but with a twist using fresh, crisp, Vegetables and loaded with Louisiana flavor! Everyone will love and enjoy this and it will be a hit! 2 cups uncooked basmati rice, rinsed 3 1/2 cups vegetable broth (for the rice) 2 tablespoons cooking oil (olive, canola, coconut) 1 medium yellow or white onion, diced 2 green onions, finely chopped (white and green parts), plus more for garnish 1 celery stalk, diced 1 red bell pepper, diced 1 fresh jalapeño pepper, diced and seeds removed 2 cloves garlic, minced 1 tablespoon creole or cajun seasoning 2 teaspoons black or white pepper 1 teaspoon kosher salt 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 2 bay leaves 1 tablespoon chopped fresh thyme 1/4 cup Worcestershire sauce 1 tablespoon soy sauce 1/2 cup vegetable broth 2 cups fresh spinach leaves, rinced Ellen’s Magic: You can also use leftover Rice for this recipe. For the Basmati Rice: In a medium saucepan over high heat, add in the 3 1/2 cups of vegetable broth and rice and bring to a boil. Then turn the heat down to low and let the rice simmer for 7 to 10 minutes or until all the liquid absorbs. Set aside. For the Dirty Rice: In a large pot over medium-high heat, add and heat the canola oil. Add in the onion, green onion, celery, bell pepper, jalapeño, and garlic and cook, stirring frequently, until the vegetables are soft about 7 minutes. Add and stir in the creole (or cajun) seasoning, salt, pepper, onion powder, garlic powder, bay leaves, thyme, cooked rice, Worcestershire sauce, soy sauce and 1/2 cup vegetable broth until the rice is coated with the sauce. Add in the spinach then reduce the heat to medium-low, cover and cook until the spinach has cooked down and the flavors are combined, about 15 minutes. Garnish with green onions. Serve and enjoy!
