İngridents: Cup size 200ml 1½ cup granulated sugar 5 large eggs, room temperature 1½ cup whole milk 1½ cup vegetable oil 3 cups all-purpose flour 2pack (total 20gram) baking powder 2pack (total 20gram) vanilla powder Cream Layer 1 large eggs 3 tbsp cup powdered sugar 1 tsp vanilla extract 200gr cream cheese Topping 1 cups mixed berries (blueberries, raspberries, blackberries – fresh or frozen) Instructions Prepare the cake batter: In a large bowl, beat the eggs and granulated sugar for about 4–5 minutes until pale and fluffy. Add the milk and vegetable oil and mix until combined. Add dry ingredients: Sift in the flour and baking powder. Add the vanilla extract and and lemon zest, then gently mix until smooth. Transfer to baking dish: Pour the batter into a parchment-lined medium baking dish and spread evenly. Prepare the cream layer: In a separate bowl, whisk the eggs, powdered sugar, and vanilla until smooth. Add the labneh and mix until you get a pourable, custard-like consistency. Assemble the cake: Sprinkle some of the berries over the cake batter. Spoon the cream mixture over the top in small dollops. Finish with the remaining berries. Bake: Bake in a preheated 320°F (160°C) oven for 45–50 minutes, or until a toothpick inserted comes out mostly clean. Serve: Let cool slightly or completely before slicing. Dust with powdered sugar if desired and serve.
