Spicy Soy Milk Ramen (Vegetarian Ramen) INGREDIENTS 2 tsp sesame oil 3 cloves garlic 1/2 inch ginger 1/4 cup scallion (white part) 2 tsp spicy chili bean paste 2 tsp Japanese miso 1 tbsp sake 2 tsp soy sauce 1 cup soy milk 3/4 cup dashi 1/4 tsp kosher salt 1/4 tsp white pepper powder 3 cups water 1 serving of ramen noodles INSTRUCTIONS 1. In a small sauce pan, add sesame oil. Add garlic, ginger, and scallion then cook over medium-low heat until fragrant. 2. Add spicy bean pasta and miso in the saucepan. 3. Add sake then soy sauce. 4. Gradually add the soy milk, stir constantly to dissolve the bean paste and miso then add dashi. 5. Add salt and white pepper then set aside. 6. In a different pan, boil water then add the noodles. Remove the noodles after 30-60 seconds. 7. In a ramen bowl, add the noodles then pour the hot broth in it. Place the toppings of your choice and enjoy!
