Add sugar and mix until fully dissolved. Pour in vegetable oil and stir. Blend rolled oats into a fine oat flour. Add the oat flour to the egg mixture and mix well. Gently heat the milk (do not boil). Add cinnamon and ginger. Pour the warm milk into the bowl and mix until smooth. Grate the apples on a coarse grater and add to the batter. Add flour: 2 tbsp for soft, apple-forward pancakes 4–6 tbsp for thicker, classic pancakes Heat a pan, grease with butter, and fry pancakes on both sides until golden. Stack the pancakes, brushing each layer with melted butter if desired.
