Sweet Sugarless Story Let us celebrate the gorgeous winter tomatoes with this beautiful recipe that hails from a community which loves its food just like us Punjabis. I have taken the classic Sindhi Kadhi and given it a healthy twist. Very low oil and all the nutrition of vegetables stays intact as we don't discard and boiling liquids and it all remains in the base. Ideally a lot of sindhis add potato to this, but avoid it to keep it diabetic friendly, feel free to add any other vegetables of your choice, if adding small eggplant they will need to be fried too just like the okra as shown in the video. The recipe is something I enjoy like a soup /minestrone, but it can comfortably be eaten with rice / brown rice / boiled millets etc. If you don't want to add vegetables to it this recipe can be used as a tomato shorba as well. Try this out, it is filling, flavorful and very healthy too. India has such a beautiful culinary canvas and so many vibrant dishes that even a diet can be made super fun.
