🍊 Mandarin (Orange) Cake Recipe 🍊 Discover the secret behind making the softest, moist Orange Cake using whole mandarins! 🍊✨ Today, I’m making a soft and fluffy Orange Cake — but here’s my secret — I’m using whole mandarins! In Nepal, we often call them oranges, but mandarins have an extra fresh citrus punch This simple recipe is perfect for beginners and transforms fresh mandarins into a fluffy, aromatic cake that melts in your mouth. 🌟 No fancy equipment needed — just fresh mandarins, basic pantry ingredients, and a little love from your kitchen. If you’ve seen my Shorts video, this is the full step-by-step version where I share extra tips to get it perfect every time! Ingredients: 2 whole mandarins (boiled and pureed) (approx 500gm) 2 & 1/2 cups almond clour 1 cup (200g) sugar (adjust to taste) 4 large eggs 1 & 1/4 tsp baking powder 1/4 tsp salt Instructions: Boil mandarins (with skin) for 15 mins. Rinse the water and again boil for 15 mins. If using oranges boil extra 10 mins Let them cool Meanwhile mix gently all the dry ingredients (almond flour, baking powder, sugar, and salt) in a bowl. Once the mandarins are cooled down, cut them into small pieces. Blitz them in a food processor and make them puree. It doesn't need to be too smooth. If you don't have food processor just cut them further to smaller pieces (like making chicken mince) In the same food processor add the dry ingredients and mix them for about 10 secs. If the batter looks too runny you can add 1 to 2 tbs of almond flour in the mixture. Pour into a lined or greased 9" cake tin. Bake at 150°C (302°F) for 60 minutes or until a skewer comes out clean. Let it cool completely in the cake tin before you take it out. The middle of the cake might shrink a little. Cake is sticky so be careful when you take it out. I prefer to put it upside down in the cake stand. Slice and enjoy this citrusy magic! 🍰✨ Decorate with fresh orange swirl or dried oranges. Sprinkle some icing sugar.
