If you’d like to join Obi 🐱 and I as we bake our way through life, don’t forget to subscribe! @TokyoDough —————————— Macaron Recipe 🍰 90g almond flour 130g powdered sugar 3 egg whites (room temp) 90g caster sugar Dash of vinegar and cream of tartar 1 tsp vanilla extract Instructions 🍰 1. Pulse the almond flour and powdered sugar in a food processor 2. Sift twice and discard any excess 3. In a stand mixer, beat the egg whites with a dash of cream of tartar, until light and fluffy 3. Slowly add caster sugar until stiff glossy peaks form 4. Add vanilla (and any gel food colouring), and do a final whisk. Mix the last little bit by hand 5. Macronage - add ⅓ of the dry mixture (almond flour + powdered sugar) and fold. Then add the rest and fold, until it drops like ribbons 6. Transfer batter to piping bag and pipe onto baking sheets 7. Tap on counter to release air bubbles, then poke any remaining bubbles with a toothpick 8. Preheat oven to 140C 9. Let macarons sit at room temperature for 30 min+ until no longer sticky to the touch 10. Bake one sheet at a time for 16-20 min 11.
