Jian Dui (煎堆) also known as Chinese sesame balls, are an iconic treat in Chinese cuisine. They are glutinous rice flour pastries that are usually deep fried but in this recipe, I took a healthier approach by air frying it instead to minimize the use of oil. The exterior of these pastries is a golden crispy skin coated with fragrant sesame seeds. When you bite into them, the skin has a soft and chewy texture creating a wonderful contrast of textures—crunchy on the outside and soft and chewy on the inside.
