History states that the word "vatrushka" is of ancient origin. In the western dialects "Vatra" means "fire". I don't think the name has to do anything with temperature, but rather represents the "Sun", as a symbol of life, that is why this bread is round and the filling is yellow. VATRUSHKI RECIPE: For the dough: Milk(warm)220ml/¾cup Flour(ap)450-500g/3cups Sugar 80-100g(½cup) 1 egg or 3 egg yolks Butter(soft)70g/5tbsp Fresh yeast 30g/2tbsp (or Dry yeast 15g/1 tbsp.) Salt 1 tsp Make the dough (refer to the video)and let it proof for at least 1 hour. Sometimes it takes 1 hour and a half to get triple rise. While the dough is rising, make cheese filling. Farmer Cheese 400g/14oz Sugar 80g/½cup 1 egg Salt ¼ tsp Vanilla Sugar 1 tsp ½ cup Golden Raisins Use hand blender to make cheese filling smoother. It should look like soft cream cheese. Check on your dough. Out of this dough you can make 12 breads, about 80 g each. Divide pieces and spread them apart on lined baking tray. Let proof covered for another 20 minutes. Using glass, diameter 2 inches, make crater in the center of the bread. Brush with egg yolk mixed with 2 table spoons of milk. Scoop filling out(2 table spoons) into each bread. Brush filling with egg yolk mixture. Bake at 360°F(180°C) for 20-25 minutes or until golden brown. Serve warm with cup of tea. Enjoy! Thank you for watching! Please like and subscribe!
