Looking for something different to bake for Thanksgiving ?? Why don't you try my wintery pumpkin cheesecake ? Recipe is below X Ingredients: For the base: 100g roasted walnut halves, roughly chopped 75g dark muscovado sugar 2 tbsp roasted sesame seeds 50g unsalted butter, cubed 75g plain four ½ tsp cinnamon For the filling: 400g cooked pumpkin 150g golden caster sugar finely grated zest of an orange 2 tsp vanilla bean paste 300g full-fat cream cheese 400g mascarpone cheese 5 eggs Method: 1. Have a 20 cm round springform tin ready. 2. In a food processor, grind the walnuts, sugar and seeds until fine. Add the butter, flour and cinnamon, and grind into a dough. Press this into the base of the tin evenly, then bake at 180°C/160°C fan/350°F/gas mark 4 for about 20 minutes, then leave to cool. 3. In a food processor, puree the pumpkin, sugar and vanilla. Add the cream cheese, puree again, then add the mascarpone and eggs (one by one) and puree until smooth, scraping the bowl down as you go through the stages. 4. Grease the inside of the tin slightly and add the filling, then bake at 150°C for 60-70 minutes or until there’s only a slight wobble in the middle, leave to cool on wire rack then chill to set firmly (preferably overnight). 5. Serve topped with slightly sweetened vanilla whipped cream dusted with more fresh orange zest. Happy Baking !! XXX
