A decadent cheesecake recipe straight from Japan! JAPANESE CHEESECAKE Ingredients ½ cup cream cheese 2 tbsps butter + for greasing ¼ cup milk 3 eggs 1 tsp vanilla essence ¼ cup refined flour + for dusting 2 tbsps corn starch 1 lemon, cut into half ¼ cup castor sugar Method Preheat 160˚C. Grease a silicon loaf mould with butter and dust with flour. Set aside. In a bowl, add cream cheese, butter, milk and whisk well. Heat sufficient water in a deep bottom pan, place the bowl on top and constantly whisk till well combined. Separate egg yolks from the white and add into the cream cheese mixture. Reserve the egg whites in another bowl. Add vanilla essence into the cream cheese mixture and mix well. Sieve flour and corn starch into the bowl and squeeze ½ a lemon. Whisk well. Squeeze the remaining lemon into the egg whites and beat the mixture till foamy. Add castor sugar little by little and beat till it reaches stiff peaks. Add ⅓ egg whites into the cream cheese mixture and fold till well combined. Add the remaining egg whites and gently fold in the mixture. Pour the mixture into the loaf mould and tap it. Place it on a baking tray and add some water. Bake for 45-50 minutes and take it out of the oven. Allow to cool completely and de-mould. Slice, dust with icing sugar and serve with blueberries.
