We reached out to one of Texas' renowned BBQ cooks Junior Urias of Up In Smoke BBQ and asked him about cooking Barbecue Beef Ribs Texas Style. We got some of his new rub, Paydirt, and tested the recipe out. Short Ribs Texas Style is a staple in the Lone Star state and many other states are just catching up to how wonderful and tasty they can be cooked low and slow. This Texas Style BBQ Beef Short Rib Recipe is simple to follow and easy to make great Beef Ribs, you just need to be patient. Select a good grade of beef, Prime, CAB, or Wagyu Remove the fat cap and silver skin on top remove the membrane on back We used Junior's new Paydirt and a little of his Rub For Grub. The topside and edges we covered with Paydirt, the backside we did with a light coating of Rub For Grub followed by Paydirt, then wrapped them and rested them in the fridge overnight. We cooked the ribs at 250 degrees on an offset smoker using Kingsford charcoal as our main heat source and a mix of Mesquite and Hickory wood splits in a 2/1 mixture. After 2.5 hours we opened the smoker for first time and sprayed the ribs. We did not wrap the ribs during the cook. We cooked the ribs to an internal temp of 205 degrees, it took 8hrs. We rested the Beef Ribs for 1 hour tented lightly with foil before cutting. Make sure you cook beef short ribs to 205 degrees because this helps to breakdown all that connective tissue and it turns into a jello like juicy goodness.
