There's no need to over-complicate Arroz con Leche. The way I make it is simple, using ingredients you probably already have on hand. Yet, it's absolutely delicious. Growing up, we enjoyed "Sweet Rice" as a hot breakfast cereal. Read on for the easy recipe: Arroz con Leche/Sweet Rice 1 heaping cup long grain rice 3 cups of water 2 cinnamon sticks a pinch of salt (approx. 1/4 tsp.) 3 1/2 cups milk (preferably whole milk) 1/2 cup sugar to start (add more after tasting, if you want it sweeter) dash of vanilla extract (approx. 1 tsp.) *additional ground cinnamon for garnish *raisins or nuts are optional In large pot over medium high heat, add rice, water, pinch of salt, and cinnamon sticks. Bring to boil, then reduce heat and let simmer on low approx. 15 mins so that the water is absorbed into the rice. Then add in milk, sugar, and vanilla extract and let it continue to cook at a low simmer until rice is fully cooked and you're left with a creamy, somewhat runny consistency. Taste to ensure your level of sweetness and adjust if necessary. Serve while hot, garnishing with additional ground cinnamon. Thanks so much for checking out this video.
