A cookie inspired by the popular Levain bakery in New York City. I have been playing around with this recipe for ages and am finally sharing it. This version is less sweet and also slightly smaller in size than the one it is modelled after. It’s a cookie that has a crisp edge and gooey middle whilst hot, a soft middle when warm and a fudgey middle when cooled.
