Here's a delicious and easy way to make butternut squash with apples on the stove WITHOUT added oil or butter. This delicious fall dish can be used as a side dish or even a dessert. Stove-top Butternut Squash with Apples (No Added Oil) Makes About 4 Servings 1 Small butternut squash, peeled and cubed (about 3 cups of cubes) 1 Apple of choice, cut into bite-size pieces (peeling is optional) Up to 1 cup of apple juice, as needed ¼ cup raisins or dried cranberries, or to taste Dash of ground cinnamon Maple syrup or other sweetener of choice (optional), to taste Chopped toasted walnuts, optional garnish Wash, peel, and cut the butternut squash into cubes. Cut the apple into bite-size pieces. Peeling the apple is optional. Heat a nonstick skillet over medium heat. Add enough apple juice to cover the bottom of the pan, the diced squash, and raisins. Sprinkle with ground cinnamon. Stir-steam the squash for about 5 minutes until the cubes start to get tender. Add more juice as needed to keep the mixture from drying out. Add the apples and added sweetener, if desired, and more cinnamon if needed. Stir to combine. Continue stir-steaming until the apples and squash cubes are fork-tender. Add more juice as needed during the cooking process to keep the mixture from drying out. When the apples and squash are fork-tender, remove from heat and sprinkle with chopped toasted walnuts, if desired. Total cooking time is about 10 to 12 minutes, depending on the size of the squash cubes. Serve as a side dish or a dessert. This can be served warm, room temperature, or chilled.
