Chocolate Chip Oatmeal Cookies 3/4 cup butter, room temperature 1/4 cup Crisco shortening, room temperature 1 cup packed light brown sugar 1/2 cup granulated (white) sugar 1 teaspoon baking soda 1/2 teaspoon salt 2 eggs 1 teaspoon vanilla 2 1/2 cups all-purpose flour 1 1/2 cups milk chocolate chips 1 cup Quick Cooking Oats Preheat oven to 375°. In a bowl, beat together butter and shortening with your mixer on medium-high speed for 30 seconds. Add the brown sugar, granulated sugar, baking soda, and salt. Beat until the mixture is combined, scraping down the sides of the bowl. Beat in eggs and vanilla. Beat in the flour a little at a time. With a spatula, scrape down the sides of the bowl and fold/stir in by hand the chocolate chips and oats. Scoop dough by rounded 3 tablespoons onto a parchment paper line cookie sheet. Flatten the dough balls slightly with the palm of your hand so the cookies are round and about a quarter of an inch thick. Bake 10 to 12 minutes or until the edges are light brown. Watch closely.
