Stir Fried Beef Tenderloin with Star Anise: OMG! This dish is so easy. Full of huge flavors. Incredibly tender beef. Recipe: Marinade: 1 tsp sugar 2-3 star anise, ground 1/2 tsp ground fennel 1 tbsp dark soy sauce 1lb Beef tenderloin or filet, cut into 1 inch strips 1 inch fresh ginger, peeled and crushed 1/2 tsp salt 2 tbsp oil 4 green onions sliced 1/2 tsp ground black pepper 1 tbsp light soy sauce Directions: 1) Mix marinade Ingredients together 2) Add the beef strips, ginger and salt to marinade and let sit for 20-30 minutes 3) Heat oil in wok or non-stick fry pan, stir fry green onions for 1 minute 4) Add the beef, ground pepper, and soy sauce and stir fry for 2-4 minutes depending on thickness of strips. Notes: 1) If you pan is on the smaller size, stir fry the green onions and beef in two batches. Do not over crowd the wok or fry pan. 2) When you initially put the beef in the wok or fry pan, let it sizzle for a good 45 seconds to a minute before moving. This allows the soy sauce to caramelize a little and give your beef a nice color. 3) the star anise and fennel can be ground in a mortar and pestle or in a spice mill or a small food processor. If you don't have those, you might be able to smash them in a freezer bag with a flat bottom pan or the flat side of your meat tenderizer. 4) The flavors of this stir fry beef are pretty intense. It is best eaten with rice and a side dish that is more mild or muted in flavor. As you see in the video, we love it with Bok Choy. Enjoy! Jane
