I was watching a video where Chef Jean Georges talks about making a swordfish milanese. And I thought to myself, if he can do it with swordfish, why can't I do it with tuna? The Adriatic has tuna, and it's a prized catch. Why not make a similar dish to Jean Georges, but make it Coatian. And thus, this tuna schnitzel was born. I'm joined today by my friend Sara. She's an expat from Texas and has been living in Croatia for over ten years now. She played a large part in me moving to Croatia, without her help I'd have been lost trying to navigate everything associated with moving to Croatia. She was a great help with the preparation, and made the shoot extra fun. We made two kinds of tuna, one from the Adriatic and the other from the Atlantic, and pit them against each other to see which one was better. As a side, we made fries fried in tallow, and served with horseradish. The horseradish was a great pairing and made you forget it was fried. We kept the tuna on the rarer side, but you could drop the heat just a little but and cook for longer if you like your tuna more well done.
