Creamy Chicken and Cauliflower Rice Casserole Ingredients 6-8 chicken thighs 24 oz. cauliflower rice 12 oz. bag of frozen onions and peppers 2 tbsp. cream of chicken (butter, xanthan gum, chicken stock, heavy whipping cream and shredded chicken) 2 tsp salt 2 tsp pepper 2 tsp onion powder 2 tsp garlic powder 2 tsp chili powder 2 tsp paprika 2 tsp lemon pepper seasoning 2 tsp Italian seasoning Directions Clean up your chicken thighs to remove any excess fat. Season with salt, pepper, onion powder, garlic powder, chili powder, paprika, lemon pepper and Italian seasonings. In a oven safe dish spray with cooking spray add in the cauliflower rice, cream of chicken and onions and peppers. Mix to combine and place your chicken breast over top of the cauliflower rice.
