🍅 Easy Ratatouille Recipe | Cozy Summer Cooking & A Day by the Sea 🌊 In today’s video, I’m sharing one of my favorite French comfort dishes – a cozy homemade ratatouille recipe, perfect for using up delicious late-summer vegetables. After cooking, I’ll take you along as we refresh a cozy corner of our home with new wooden pantry shelves – adding warmth and order to our kitchen. Meg Dress with 3/4 sleeves | Linen dress https://littlewomenatelier.com/produc... *** 📖 Ratatouille Recipe (Step by Step) Ingredients: 2 zucchini 2 eggplants 5 tomatoes Salt to taste 20 ml olive oil For the sauce: 5 tomatoes 1 bell pepper 1 onion 1 tbsp tomato paste 2 garlic cloves 30 ml olive oil ½ tsp Herbes de Provence ½ tsp sugar Salt and pepper to taste Instructions: 1️⃣ Slice the zucchini, eggplants, and tomatoes into thin rounds. Soak the eggplants in salted water. 2️⃣ Finely chop the onion and bell pepper. Peel the tomatoes and cut into cubes. 3️⃣ In a pan, sauté the onion in olive oil until translucent. Add the bell pepper and cook for 2 minutes. 4️⃣ Stir in tomato paste, tomatoes, garlic, sugar, salt, and herbs. Simmer for 5 minutes. Blend the sauce if desired. 5️⃣ Spread the sauce on the bottom of a baking dish. Arrange alternating layers of eggplant, zucchini, and tomato slices on top. 6️⃣ Sprinkle with salt, drizzle with olive oil, cover with parchment, and bake at 375 °F (190 °C) for 1 hour.
