Filipino Adobo Chicken Make 4 portions Marinade: 8 chicken thighs (boneless, skinless) 4 cloves garlic, finely chopped 1/3 cup soy sauce 1/3 cup vinegar 2 bay leaves Cooking sauce: 3 TBS vegetable oil 4 clove garlic, finely chopped 1 cup diced onion 1/4 cup brown sugar 1 TBS crushed black peppers 1/2 cup finely sliced green onions for garnish Add the chicken thighs, soy sauce, vinegar, garlic and bayleaf to a zip lock bag. Marinade overnight. Saute the chicken thighs in the vegetable oil on both sides and then place on a plate. Add the onion, garlic, brown sugar and black pepper and stir until the sugar dissolves. Add the chicken and marinade back to the pan and simmer the chicken for about 12-15 minutes uncovered. Turn the chicken over and cook for another 10 minutes until tender and the sauce is syrupy.
