Mix well until the ghee is incorporated into the flour mixture. Add a pinch of cooking soda and mix again. Slowly add water as required and knead into a stiff dough. Divide the dough into equal portions and shape into round balls (bati). Preheat the oven (or traditional bati oven/ tandoor). Place the bati balls inside and bake on medium heat until golden brown, crisp from outside, and cooked inside. If using a gas stove, you can also roast the batis on low flame until evenly cooked. Once cooked, dip the hot batis in melted ghee or brush generously with ghee. For Dal: Heat 2 tsp ghee in a pan. Add cumin seeds, let them crackle. Add chopped garlic, green chillies, ginger, and dry red chillies. Sauté until aromatic. Add chopped onion and fry until golden. Add chopped tomato and cook until soft. Add red chilli powder, coriander powder, turmeric powder, and sauté the masala well. Add the boiled mixed dal and stir. Add salt, garam masala, and a little water to adjust consistency. Let it simmer for a few minutes until all flavors blend. Garnish with fresh coriander. 00:00 intro 00:53 chef Intro 01:25 Prepare batti 03:59 Roasting Batti 05:27 Dal Making 08:27 Serving Shot 08:41 outro
