CORN WITH MELTED CHEESE Servings: 2-3 Difficulty: Easy Cooking time: 10 minutes Prep time: 15 minutes 1 boiled corn kernels 1 tablespoon butter or 2 tablespoons olive oil 2 garlic cloves, chopped ½ teaspoon ground red pepper 2 pinches of nigella seeds 1 pinch of salt A handful grated any kind of melting cheese (60-85 g), we use traditional kolot cheese, but you can use kaşar cheese, string cheese or mozzarella • Melt the butter or heat the olive oil in a pan, add the garlic and cook them 1-2 minutes. • Set aside 1 tablespoons of corn kernels, add the rest in the pan and stir. • When the garlic gives its aroma to the corn add half of the ground red pepper, a pinch of nigella, and salt. • Cover the corns with the cheese slices that you prefer, turn the heat off and close the lid until the cheese melts or simmer until cheese melted. • Add rest of the ground pepper, nigella to the top and voila! It’s ready to eat directly. Don’t hesitate to dip your bread! CORN TEMPURA Servings: 3-4 Difficulty: Medium Cooking time: 10 minutes Prep time: 15 minutes 2 boiled corn kernels 200 ml sprinkle water, very cold, 4/5 cup 4 tablespoons of flour 1,5 tablespoons of corn flour 1 levelled teaspoon of salt ½ teaspoon baking soda 1 teaspoon corn starch 250-300 ml oil for frying Optional addings; 5-6 black olives, chopped 1-2 sprigs fresh basil, chopped 1-2 sprigs fresh oregano 1 garlic clove, chopped For the sauce, mix the ingredients below; 3 tablespoons mayonnaise 1 teaspoon ground chilli pepper 1 garlic clove, grated • Pour the oil in a pan and heat it in the medium burner. • Stir sprinkle water, flour, corn flour, salt, baking soda and corn starch in a bowl. • Add the corn kernels and mix again. You can add the olives, herbs at this stage. • Use a tablespoon gently ladle the mixture into the oil. • Don’t crowd the pan, otherwise the oil’s temperature will go down. Let each corn fritters fry for 1 minute, then use a spatula to gently flip it over. When both sides are golden brown, it’s ready to eat!
