Add the chopped shallot or onion and sauté until soft and lightly golden. Add the chopped mushrooms and grated garlic to the pan. Squeeze in the juice of half a lemon, mix well, then cover with a lid. Let it cook on low to medium heat for a few minutes until the mushrooms soften. Slice the bell peppers into rings. Set the rings aside. Chop the remaining bell pepper pieces into small cubes. Grate the potatoes, then squeeze them firmly to remove excess moisture. Add salt, black pepper, turmeric, and thyme to the pan. Mix well so the seasonings evenly coat the mushrooms and onions. Add the potatoes and mix well. Add chopped bell pepper pieces and mix everything well, then remove the pan from the heat. Transfer the cooked vegetables to a large bowl. Add the dried or fresh herbs and crack in the eggs. Add the flour and stir until everything is fully combined. Heat a little oil in a clean pan over medium heat. Place the bell pepper rings in the pan and fill each ring with the mixture. Cover with a lid and cook for 5 minutes. Carefully flip the stuffed pepper rings. Cover again and cook for another 5–7 minutes until fully set and golden. Pro Tips: Use fresh herbs for extra flavor.
