Heat ghee in a pressure cooker or deep pot. Add cumin seeds and let them splutter. Add ginger, garlic, green chilli, and onion. Sauté till soft. Add tomato and turmeric; cook till mushy. Add chopped palak and cook for 1–2 minutes until it wilts. Add soaked rice & dal. Mix well. Add salt and water. Pressure cook: 2–3 whistles (or simmer 20 minutes in open pot). Mash lightly for that soft khichdi texture. 🍽️ Serving Suggestions Top with extra ghee 😋 Serve with: Curd Papad Lemon pickle Jain-style: skip onion & garlic.
