[ RECIPE BELOW ] I made these bars for my non-vegan friends for a potluck dinner last week and they all LOVED THEM!! While they may not be the healthiest they are super easy to make if you're pressed for time - and who doesn't love peanut butter, Oreos, and cookie dough?! INGREDIENTS - (see notes below for additional details) 2 tubs of Eat Pastry Vegan Cookie dough, or other vegan dough of choice 12+ chocolate sandwich cookies 1/4 cup powdered peanut butter 2 tbsp water DIRECTIONS - (1) Preheat oven to 350 F (2) Line a 9x11 pan (or 9x13) with parchment paper (3) Spread 1 tub of cookie dough evenly across the base of the pan (4) Firmly press a layer of sandwich cookies into the dough (5) Mix 1/4 cup of powdered peanut butter with 2 tbsp of water, and then fill in the gaps created by the cookies with the mixture (6) Place a the second tub of cookie dough on top of this layer; it helps to flatten the dough out a little first since the cookies and pb are kind of mushy (7) Top with 1-2 crushed cookies, if you have any extra (8) Bake for 30-35 minutes, or until the top is golden and a toothpick comes out cleanly (9) Let bars cool in pan, then remove and cut accordingly (10) Enjoy! Sharing is optional ;) NOTES + SUBS = While I cannot guarantee the same results if you choose to make your own cookie dough, here are two recipes you could try. (GF) I happened to have one tub of regular cookie dough and one tub of gluten free cookie dough, but two tubs of the same type will work as well You can substitute regular peanut butter (or any nut butter) for powdered PB if you do not have any If you do not have parchment paper, you can lightly grease the pan instead As many vegans do not like to support OREOs because they contain palm oil, you can use any other chocolate sandwich cookie of your choice. I happened to get these from ALDI and I thought they tasted identical.
