Prepare the Base Curry Heat desi ghee in a steel or clay pan (avoid non-stick/aluminium). Add whole spices (bay leaf, cardamom, cinnamon, cloves). Add onions and sauté until golden brown. Add garlic, ginger, green chilies, ajwain, and cumin. Mix in all powdered spices and fry for a few minutes. 2. Add Tomatoes & Curd Add tomato puree and cook until ghee separates. Add curd and mix well for rich consistency. 3. Version 1: Boiled Egg Curry Add halved or grated boiled eggs to the curry. Garnish with coriander and serve hot. 4. Version 2: Creamy Egg Curry Add grated eggs and 2 tbsp fresh cream to the same curry. Stir gently until creamy. Add chaat masala for extra flavour. 5.
