Mango sticky rice: 1.5 cups leftover cooked rice (any kind) 1 mashed ripe banana 2 cups frozen mango 1 cup plant milk 1 tsp vanilla extract 1/8 tsp ginger powder Spanish Potato Omelet: 3 large potatoes, into thin slices 1 onion, thin slices 1 tbsp salt 1 cup chickpea flour 1 cup water Pinch of black salt (optional) Carrot fritter: 600 g grated carrot 1 onion sliced 80g chickpea flour 1/4 cup cornmeal 2 tsp corriander powder 2 tsp smoked paprika 1 tsp garlic salt 1 tsp baking powder I am uploaded these videos DAILY in the hopes that is helps inspire you and reassures you that you can eat this was no matter how busy or crazy your life is.
