These Poffins are the very best, like no treat ever was! To bake these is your real test. To eat them is your causeeeeee. Pokémon! Okay but really these are good! If you've ever wanted to learn how to make cream puffs, now is your chance! They're actually quite easy! We made these to celebrate getting our hands on some Prismatic Evolution boxes (and we might make them again for World Pokémon day)... Also at 02:15 YES I know it's a Magi Karp on a Yugi-Oh Card. Once boiling heavily, reduce heat to medium low and add the flour, stirring constantly until the mix forms a smoothish ball that pulls away from the sides of the pot and leaves a teeny bit of a film on the bottom of the pan. We need the gluten to develop here. Remove from the heat and continue stirring until it has cooled quite a bit. Add the eggs one at a time until a smooth batter forms. Transfer to a piping bag with a tip and pipe into little poffin shaped puffs. Smooth the tops with a finger dipped in water and bake for 35 minutes. Remove from the oven, pierce with a pair of scissors, return to the oven with the heat off and door cracked and allow to cool for 10 minutes (this keeps them from cooling too quickly). Cream Cheese Whipped Cream Filling: 4oz Cream Cheese 1 Cup Whipping Cream 1/4 Cup Powdered Sugar A Splash of Vanilla Extract Tiny pinch of salt Combine all ingredients in a medium bowl and whip on high with a handheld mixer until fluffy and firm peaks have formed. We need the stability in the whipped cream to make sure it doesn't leak out of the cream puff... ew. Fill each cream puff with the mixture and set aside. Glaze: 1 Cup of Powdered Sugar 1-2 Tablespoons of Milk 1/4 Teaspoon Flavoring. I used Lemon Juice, and powdered freeze-dried berries. Food Coloring (if desired) Sprinkles for VIBES Mix the powdered sugar, milk, and flavoring together in a bowl until thick but still dip-able. Coat the Cream Poffins in the glaze and top with corresponding sprinkles! Feed to your Pokémon... and yourself! Enjoy.
