The Paneer Filling Ingredients: Crumbled paneer, 2 large onions, 10-12 garlic cloves, 1.5 inches of ginger, black pepper, fresh coriander, and 2 tbsp refined oil. Process: Pulse the onions, ginger, and garlic in a processor. Mix them into the crumbled paneer with pepper, coriander, and oil until well combined. 3. Assembly & Steaming Process: Roll the dough into small, thin circles (puris). Place a spoonful of filling in the center, wet the edges, and pleat them to seal. Steaming: Arrange the momos on a greased steamer tray. Place over boiling water and steam for 10 minutes until the outer layer becomes translucent. 4. Spicy Momos Chutney Ingredients: Peanuts, 4 dried red chilies, garlic cloves, sesame seeds, chopped tomatoes, and salt. Process: Roast the peanuts, chilies, garlic, and sesame seeds. Add tomatoes and salt, cooking until soft.
