Sometimes a plant-based gal just wants some dessert! This is a great one because all it has is fruits and oats--it's so healthy you could eat it for breakfast! Mixed Berry Cobbler I used 16 oz boysenberries and 12 oz blueberries, but you can use whatever combination of berries you prefer, a total of 3 1/2 cups 1 c rolled oats 5 oz pitted medjool dates combined with 1/2 c boiling water and soaked for 30 min to make date paste 1/2 t vanilla 1/2 t cinnamon Preheat the oven to 350 degrees. First, make the date paste. Soak the dates in boiling water for 30 min and then carefully transfer to food processor. Process into gooey paste. Add 1 t vanilla. In a large bowl, combine the fruit (fresh or frozen is fine.) Fold in the 3/4 of the date paste mixture until well coated, (reserving 1/4 of the date paste to flavor the topping.) Transfer the fruit/date paste/vanilla mixture to a silicone baking pan. Now make the topping. In the bowl where you had the fruit, add the rolled oats and the rest of the date paste. Add 1/2 t cinnamon and mix well. Sprinkle the topping over the fruit mixture. Bake uncovered in a 350 degree oven for 40 min. Enjoy! My name is Heather and I'm from Portland, Oregon.
