Tonight on Cast Iron Wednesday, we're roasting a chicken in only 45 minutes! This is a recipe I'm proud of, because it's fast and easy, and it doesn't make a mess. On Facebook's Cast Iron Cooking group, this is known as the "500 degree dutch oven chicken," because that's exactly what we'll be doing: heating a cast iron dutch oven to 500 degrees (Fahrenheit), dropping in the chicken, and roasting it in record time. It's a great way to demonstrate how versatile cast iron cooking is, especially this chicken is roasted without any oil or frying. It also doesn't splatter grease all over the oven! And of course, this is an excuse to talk about cooking chicken in cast iron, because there are so many way to use cast iron for making some of the tastiest chicken you've ever eaten.
