Risotto has been a staple in our household for many years, and I have developed a recipe for mushroom risotto, which is sure to become one of your favorites. Looking forward to sharing my tips with you, and I hope you are able to make this recipe soon, as it is amazing :) Ivo’s Special, Mushroom Risotto Serves 2 – 4 Prep + Cook Time: less than 1 hour Ingredients ► 1 cup risotto rice – preferably carnaroli (alternate is arborio rice) ► 1 1/2 litres of chicken broth (alternate vegetable or beef broth) ► 3 tbsp salted butter ► 3/4 cup grated parmigiano-reggiano ► 1 medium onion sliced thin, then diced – preferable sweet onion like Vidalia (alternate, any medium onion) ► 1 clove of garlic – minced ► 1/2 cup white dry vermouth (alternate: dry white wine) ► 1 1/2 - 2 cups chopped mushrooms, cremini preferred (alternate: any mushroom) ► 4 – 5 tbsp mushroom bruschetta or tapenade ► extra virgin olive oil Directions ► Bring broth to a boil and keep on low heat (keep it hot) ► In a separate pan, drizzle olive oil (enough to cover the bottom of the pan) ► Heat olive oil and add 1 tbsp of butter ► Add the garlic and add onion - cook on medium heat till onion is translucent (~ 5 minutes or so) ► Add the risotto rice and fry for 2 – 3 minutes stirring constantly ► Add the vermouth or wine – continue to cook for another 2 – 3 minutes, stirring constantly ► Add some broth (~ 1/2 - 1 cup) and stir ► Add chopped mushrooms, stir in ► Add mushroom bruschetta or mushroom tapenade, stir in ► Add ½ cup of broth and continuously stir until all is absorbed ► Then add another 1/2 cup of broth and continuously stir until all is absorbed ► Continue adding broth in this manner till rice is cooked (takes about 20 – 25 minutes) ► Once the rice is cooked, add 2 tbsp butter and the Parmigiano-Reggiano, mix in ► Add a bit more broth (~1/2 cup to 1 cup) to get the consistency you prefer ► Remove and serve hot ► Enjoy 😊 Delicious Mushroom Risotto, with Special Tips - The Best!! • Delicious Mushroom Risotto, with Spec...
