This Fish-Pie-Tato is the ultimate comfort food mash-up. A fluffy jacket potato stuffed with a creamy fish pie filling, topped with cheesy mash and grilled until golden and bubbling. We made a classic white sauce, loaded it with fish, prawns, peas and parsley (and yes… a sneaky spoon of capers), then mixed the scooped-out potato with butter, seasoning and smoked salmon before piling it all back into the crispy skins and finishing with vintage cheddar.
