Marinate the Chicken: Cut the chicken into pieces and place them in a large bowl. In a separate bowl, mix together ginger-garlic paste, red chili powder, turmeric powder, salt, pepper powder and coriander powder . Rub this marinade well into the chicken pieces and let it sit for at least 30 minutes to 1 hour. You can also marinate it overnight in the fridge for more flavor. 2. Preparation: Heat oil in a large pan or pot over medium heat. Add the cinnamon stick, pepper, red chilies and cardamom pods. Sauté for a minute until fragrant. Add the finely sliced green chilies and onions to the pan and sauté until golden brown, stirring occasionally to avoid burning. 3. Add the tomatoes: Add the chopped or pureed tomatoes to the pan. Cook for 5-7 minutes until the tomatoes soften and the oil begins to separate from the masala. 4. Spice it up: (if required/ optional) Add the red chili powder, turmeric powder, coriander powder, and salt to taste. Stir everything together and cook for another 2-3 minutes. 5. Cook the chicken: Add the marinated chicken pieces to the pan and mix well so the chicken is coated with the masala. Cook for about 5-7 minutes until the chicken changes color and starts to cook on the outside. 6. Add water and simmer: Add enough water to cover the chicken (about 1-2 cups). Cover the pot, and cook the chicken on low to medium heat for about 20-25 minutes, or until the chicken is fully cooked and tender. 7. Add the final seasonings: Once the chicken is cooked, add the chicken masala, pepper powder, and lemon juice. Mix well and cook for another 5 minutes to allow the flavors to combine. 8. Garnish and Serve: Garnish with fresh coriander leaves (optional). Serve hot with rice, naan, or roti. Enjoy your delicious Tangy Chicken Masala!
