Seeds of prosopis Africana are used in Nigeria to prepare a local spice called Okpehe. Okpehe is a fermented product used as food condiment among the Idoma, the Igbo, the Hausa and the Igala people of Nigeria. Okpehe is used to prepare different kinds of meals such as: 1: Soups 2: stews 3: sources 4: yam pudding 5: jollof rice and many more. PREPARATION 1: Get the beans from the pod 2: boil for about four to six hours till the beans are soft. 3: fetch some in tray and add some water. 4: squeeze out the seeds from the shell. 5: wash the seeds thoroughly. 6: pour the seeds in a pot. 7: add water a little bit above the seeds. 8: boil till the water dries up. 9: set the to cool down. 10: pour beans in a woven basket and cover. 11: keep the basket in a heat area for three days . 12: pound and wrap in a nylon bag then keep back in the basket till the next day. 13: pound for the second time the following day. 14: mould to your desired sizes and dry for some days. 14: package in an air tight container.
