Kodo Millet Kheer recipe is one of the most preferred forms of Indian desserts that offer us a mélange of loaded flavours to enjoy! Kodo millets are soft, creamy, sweet and flavorful food we get organically. However, one kheer recipe that nutritious amongst all is foxtail millet kheer. Known for its amazing flavours and health benefits. Ingredients for Kodo Millet Kheer recipe: Arikelu/Kodo millet: 1 cup wash & soak for 2to 3 hours Milk: 500ml Sugar: 2tbsp Jaggery: 1 cup Elachi powder: 1/2 tsp Ghee: tsp Cashew & Badam: few Procedure for Kodo Millet Kheer recipe : 1. Begin this delicious kheer with frying cashews & badam in ghee. Heat a spoon of ghee in a pan or wok and add nuts to it. Fry for a minute on low flame. 2. Turn off the flame when nuts become light brown in colour and transfer into a small bowl and keep aside. 3. In the same pan or you can take another one and add milk and bring to a boil on medium flame. Keep stirring frequently in the middle. 4. When milk is boiled add Arikelu and mix well. Cook this Arikelu or Kodo Millet under low flame for 5 minutes. Stir once in every few minutes. 5. Close the lid and cook. Simmer over low flame till Arikelu cooked completely. Check Arikelu are cooked or not. Give a quick toss and adjust the consistency by adding more milk. 6. Add little sugar to it and mix well. Turn off the flame before adding jaggery. Add jaggery to the mixture and mix well. 7. Stir well until jaggery dissolved completely. Add Elachi powder and remaining ghee. Add fried cashew & badam and mix well. 8. The ever healthy & delicious Millet kheer is ready. Transfer into a serving bowl and serve hot. Cooking Tips for Kodo Millet Kheer recipe : • Whole fat milk is best to use khoya or Palkova • If the dough is not soft enough to make round balls then add 2tbsp of milk & mix well. • Gulab jamun should always be sautéed on low to medium flame.
