In this special episode of Mere Ghar Ka Khana, we bring you a flavorful and aromatic dish straight from the heart of Kashmir – Gucchi Pulao! Made with the rare and highly prized Gucchi mushrooms (Morel Mushrooms), this pulao is a true delicacy, packed with rich flavors and a delightful earthy aroma. 🥘 What makes Gucchi Pulao special? ✔️ Rare & exotic Kashmiri morels ✔️ Rich, nutty, and smoky flavors ✔️ Perfect for special occasions Gucchi (morels): 30-40 gm Long grain rice: 1 cup Ghee: 2-3 tbsp Caraway seeds (Shahi Jeera): 1 tsp Bay leaves: 2-3 Cinnamon stick: 1 “ Black Peppercorns: 4-5 Black cardamom: 1 Star anise: 3-4 Green cardamom pods: 4-5 Onions (Sliced): 2 big Ginger garlic paste: 1 tbsp Green chilli (chopped): 1 Salt to taste Turmeric powder: 1/2 tsp Coriander powder: 2 tsp Garam Masala: a pinch Saffron strands soaked in 2 tbsp of milk: a generous pinch Hot Water: should come 1 inch above the rice. Method - Wash the Guchhi thoroughly under running water and removed all the dirt and grit. Then soak them in slightly warm water for atleast 20-30 minutes. Now take a thick bottomed pot and heat ghee in it. Add the caraway seeds, let them splutter, then add the whole spices and sauté till fragrant. Then add the sliced onions and sauté till golden brown. Now add the ginger-garlic paste and cook till the raw smell disappears. Now add the soaked Guchhi without the water and cook on high flame for 3-4 minutes. Throw in the chopped green chillies and season with salt and add the dry masalas. Now add the water in which the gucchi was soaked and then if you need more, add regular hot water just enough to cover the rice. Add the saffron milk and garam masala then at cover the pot. At a slow flame Let it cook undisturbed for 12-14 mins or till cooked and fluffy.
