Super hot chicken pathia curry, Not for the faint hearted. This is my own take on the Chicken pathia, Its a long video but i really wanted everyone to see the time that goes into making a really tasty curry without the hassle of making a base sauce accompaniment. Ingredients 2 to 3 chefs spoons, Butter ghee or rapeseed oil 1 star anise several cardamom seeds or 2 green cardamom pods split. 2 cloves 2 dry kashmiri chillies 1.5 inch cassia bark 170 grams of finely diced onions ½ tsp salt ½ tsp course black pepper 1 TBSP Garlic paste Fresh or jar 1 TBSP Ginger paste Fresh or jar 1TBSP extra hot chilli powder 1TBSP Mixed powder (see our older mixed powder video) 2 tsp Jaggery, unrefind brown sugar 1tsp tandoori masala powder ½tsp smoked paprika 1½TBSP tomato puree 14 bite sized pieces of cooked chicken or cooked chicken tikka 1 cup of passata diluted with 1 cup of water 1 sweet red pepper chopped 2 scotch bonnets sliced and diced 4 to 5 thai red chillies halfed 1tsp Mr Naga Pickle ¼ tamarind concentrate 1TBSP mango chutney ½ small lemon 1 tsp dried fennugreek leaves / methis leaves pinch of garam massala 1 tomato chopped into 8 pieces The techniques used in this curry really bring out the flavour so please make sure you try your best to watch all the video.
