It's spring and it's the asparagus season. I used store bought puff pastry to make the base, a goat cheese filling and of course fresh green asparagus. It's so simple and stunning. I have finished it with fresh chives and bacon. You can skip bacon to make it all vegetarian. Ingredient: Asparagus 200 g Cream cheese 1/4 cup Goat cheese 1/4 cup Zest of 1 lemon Salt 1/4 tsp Chives 1/2 tbsp Fried bacon 2 Puff pastry 200g Olive oil, salt and black pepper for seasoning asparagus Egg 1 for brushing Method: Trim the woody ends of asparagus and cut into 1 inch pieces. Marinate asparagus with salt, pepper and olive oil. Mix in cream cheese, goat cheese, lemon zest, salt(1/4 tsp) and black pepper to make the cheese filling. Score a border with knife. Puncture the puff pastry with fork. Spread the cheese mixture on puff pastry and top with asparagus. Brush the edge with egg. Bake at 200 C for 15 minutes. Top with chives and bacon. Enjoy!
