This 100% rye bread recipe is a simple process - let me lead you through it step by step so you can benefit from the advantages of freshly milled rye flour! Here's the no wheat, dairy free rye bread recipe for roughly 1 kg rye (no caraway seed needed, but you can add it if you like): Begin in the morning (any time before noon). Take 1 cup of starter (mine was overfed so I took two). -Add ca. 2 cups of lukewarm water, stir. Add freshly milled rye flour by the handful and stir it in. Repeat until it feels like a thick foam when you stir (but it will not actually be foamy, just feel like it!). Cover and leave in a warm place until it is risen a bit (it will remind you of mousse au chocolat). This will take about 3-4 hrs if the temperature is ca. 35*C /95F , up to five hrs if the temperature is lower. However, make sure it is warmer than normal room temperature. For example, put it on top of your refrigerator near the wall, behind your computer, or in the oven with just the lamp on. Or put it near the wood stove if you have one! Now add 1 tsp salt (a little bit of lukewarm water is optional) and again add freshly milled rye flour by the handful and stir, until the dough gets too dense and heavy to stir. Cover and leave in a warm place, 1-2 hrs depending on temperature (see above). If your dough is very dry, you should brush or spray (or just pat) the surface with a little bit of water - check after 30 minutes. Water is necessary if the surface has become dry and leathery. The dough should now look puffy, slightly "swollen" - not actually risen, or just a tiny bit. If it has actually risen, it is too wet! Put it in a buttered pot. I use a cheap enamel cooking pot, nothing special. Steel will work, too. Don't forget to check for any plastic/wooden parts! Smoothen the surface with a wet spoon. Cover with a tea towel and leave in a warm place for 1 hr. Bake at 50*C (125F) for 1 hr and at 200*C (395F) for 1 hr 40 min. Take it out of the oven, out of the pot, wrap in a tea towel and leave over night before you cut your bread. #ryebread #dairyfree #sugarfree
