Zucchini Salad & Zucchini Boats AMAZING! Salad: 3 Sm-med Zucchini chopped into bite-sized 2-3 TBLS chopped Green Onion 1-2 Large Carrots, chopped into small pieces 2 medium-sized tomatoes, chopped up into bite-sized pieces ½ stalk of green Onions, chopped up (about 2-3 TBLS) Chop up all the above into bite-sized pieces (or smaller), and set them aside. For the Dressing on top: ½ block of Cream Cheese (4 oz), softened 2 TBLS Olive Oil 2 TBLS Lemon Zest Paste (Or a LARGE lemon, zested) 1 tsp Sugar 1 tsp Italian Seasoning ¼ C Bread & Butter pickles, chopped up 2 TBLS Pickle juice Salt & Pepper to taste Add all of the above to a bowl, and mix it all well. Mix it all with the chopped veggies, stir well, and refrigerate for at least an hour. Enjoy! Zucchini Boats: 2-3 good-sized zucchini, washed and cut in half long way Clean the insides out (use this in your salad above 😊). Then sprinkle some salt over the whole insides of the “boats” and set them aside to draw the water out of them, for a good 10-15 minutes. 1 LB. of Ground Turkey (or whichever meat you choose) 1 Large Onion, chopped up small 2 small/medium Carrots chopped up small 1 TBLS Minced Garlic 1 ½ TBLS Worcestershire Sauce 1tsp Garlic Powder 1 tsp Onion Powder 1 TBLS Italian Seasoning 1 Apple (sweeter the better) Chopped into small pieces ½ - 1 C Mozzarella Cheese Cook your meat, add all your spices to the meat cooking, remove from the pan and set aside (mine was canned) Now cook your Onions and carrots, and your sliced apple, until done(I used canned apples in a jar, mine, along with all the juice, and let it cook into the meat mixture) Add your Garlic, cook for a minute or so, then add your meat back into the pan and mix all together. Back to your Zucchini, using a paper towel, remove all the liquid from the boats, inside and out. Place on a cookie sheet with foil and a cooling rack, so the heat distributes evenly while cooking. Fill your “boats”, I used a little cheese first, then filled them with the meat and veggie mixture, and then topped it with more Mozzarella. Bake in a pre-heated, 375-degree oven, for 20-25 minutes (depending on your oven or the size of the zucchini you bought).
