chicken 600 to 650 gm (almost 1 pound) oil 1/2 cup yogurt 375 gm onion 1 large sliced onion 1 large round thick disks green chilies 4 to 6 ginger 1 tbsp julienne mint handful leaves ginger garlic paste 1 tbsp heaped cloves 4 green cardamoms 3 cinnamon stick 1 inch piece black cumin 1/2 tsp kashmiri chili pwd 1 tsp coriander pwd 1 tbsp heaped salt 1/2 tbsp red chili pwd 1 tbsp leveled turmeric 1/2 tsp roasted cumin pwd 1/2 tsp coal 1 small piece for smokey flavor first fry onion til edges get nicely fried.do not fry them completely put it in blender and grind with 2,3 tbsp water when onions are frying marinate chicken with g.g paste,yogurt and all powder spices if you want yogurt layer in your dish take 1/2 cup yogurt for later use then add whole spices and black cumin in remaining oil and wait for crackle. after 30 sec add marinated chicken in it. mix nicely and cover the lid and cook. flame should be on medium high . cook til oil comes out again but ,if you find lots of water comes out from chicken and yogurt. turn the flame on high and reduce the liquid . then add julienne ginger and fried onion paste. mix well and cover the lid. cook chicken until completely soft mean while burn a piece of coal. now take onion rings and spread on prepared curry. put a steal bowl or foil piece in the middle and put burnt coal on it. drizzle some oil on it and cover immediately for 2 to 3 minutes. flame should be very low at this point. after that remove the coal and turn off the flame and then make a layer of yogurt . add mint and green chilies.or add half earlier and half in the end to garnish. serve with naan,paratha or rice and enjoy :) MUTTON , CHICKEN , BEEF AND EGGS • MUTTON , CHICKEN , BEEF , EGGS MY OFFICIAL FACE BOOK PAGE: / maherazcooking MY PINTREST: / maherai MY GOOGLE+ https://plus.google.com/u/0/+MaherazC...
