Today I want to show you how to make some simple dessert mixes to keep in your pantry for when you just need a quick and easy throw together dessert. Just like the store-bought packet mixes, except without any of the nasty or confusing ingredients. These are simple to make and taste so good- you will want to stock your pantry with plenty of these budget friendly mixes. Pancake Mix (makes 5 batches of pancakes) 1 kg Plain Flour, 150g sugar, 1 2/3 cup powdered milk, 1 1/4tspn salt, 5 Tablespoons baking powder Mix together and keep in a large jar. To make pancakes you will need: 250g pancake mix, 50g melted butter, 300ml water, 2 eggs. Simply whisk together well and cook in a well buttered pan (cast iron is my favourite) and serve warm. Apple Crumble Topping (makes one crumble mix): 1 cup Plain flour, 1/3 cup coconut, 1/3 cup oats, 1 cup sugar, 1/2teaspoon cinnamon Mix together and store in the pantry. To make crumble topping, melt 150g butter and mix into the topping mix. To make an apple crumble- Preheat oven to 170c, grease a baking dish and put a tin of apples into the dish (just fruit/no juice/syrup). Top the fruit with your prepared crumble mixture and bake in the oven for 20 mins or until the top is golden. Serve warm with ice cream/custard or cream. Butterscotch Self-saucing pudding (makes 1 packet mix): Sauce packet= 3/4 cup brown sugar. Cake packet= 1 1/4 cup Self Raising Flour, 1/4 cup brown sugar, 1 Tablespoon powdered milk. Mix well and store with the sauce packet. To make Self-saucing pudding: Preheat oven to 160c and grease a baking dish. Combine pudding cake mix with 80g melted butter, 80ml water and one egg. Mix well and place into the baking dish. Sprinkle the contents of the sauce packet over the cake batter and place 40g of cubed butter over the top. Carefully pour 1 1/2 cups boiling water over the top of the cake/sauce mix and bake in the oven for 20-25 mins or until the cake is just cooked. Serve immediately with ice cream/cream or custard. The cake will rise to the top and a sauce will develop underneath.. Chocolate Self-saucing Pudding (makes 1 packet mix): Sauce Packet= 1 cup sugar, 2 Tablespoons cocoa.- mix well. Cake packet= 1 cup Self Raising flour, 1 Tablespoon cocoa, 1/2cup sugar, 1 Tablespoon powdered milk.- mix well. To make Self-saucing pudding: Preheat oven to 160c and grease a baking dish. Combine pudding cake mix with 60g melted butter, 125ml water and one egg. Mix well and place into the baking dish. Sprinkle the contents of the sauce packet over the cake batter. Carefully pour 1 1/2 cups boiling water over the top of the cake/sauce mix and bake in the oven for 20-25 mins or until the cake is just cooked. Serve immediately with ice cream/cream or custard. The cake will rise to the top and a sauce will develop underneath.. ( Oil and butter can be substituted for each other in all of these baking instructions.) (To make Self Raising flour, if you don't have any, use 1 cup Plain flour and 1 tsp baking powder- mixed together)..
