have found at the market some wild strawberries from France, so I have instantly thought about my classic recipe of Easy Strawberry Cake. You just need to mix all the ingredients in a large bowl, add the fresh strawberries (and some other optional goodies), and bake. You can store the cake in the fridge for up to 3 days! Ingredients: strawberries 250g. softened butter 220g. sugar 200g. 4 eggs vanilla extract 1 teaspoon flour 200g. baking powder 1 teaspoon buttermilk/yogurt or kefir 4 tablespoons optional: a handful of pistachios and chocolate chips icing sugar (optional) 1 teaspoon Cake tin size: 24cm diameter Instructions: 1. In a large bowl, mix the butter with sugar for 5 minutes. 2. Add the eggs one at a time and mix for about 30 seconds after each egg added. 3. Add vanilla extract and gradually add the flour with baking powder. 4. If you want, you can add some chopped pistachios and chocolate chips, or even coconut flakes. 5. In the end, add the fresh strawberries, previously sliced. 6. Bake the cake in the preheated oven for 35-40 minutes at 185°C. 7. Cover with icing sugar.
