Hey guys, thank you for taking the time to watch our video! 💕 What’s your favorite lentil and potato recipe? 😊 We made #VeganTaterTotRecipe and it’s delish! 😍 It would be nice if you guys try this as well. Remember… it’s important to get a bit of everything! 😋💕 VEGAN TATER TOT CASSEROLE ✨ 1 cup brown lentils 1 cup vegetable broth (add 1 cup of water) 1/2 onion, diced 2 tbsp. maple syrup 1 cup pasta sauce 1 tbsp. Italian seasoning 1 tbsp. soy sauce 1 tbsp. crushed garlic 2 tsp smoked paprika 24 pcs tater tots (frozen) 1 cup of water salt and pepper to taste *grated vegan cheese (optional) VEGAN CHEESE SAUCE INGREDIENTS: 1 tsp miso paste 1 tsp cornstarch 1/2 cup plant-based milk 1 tbsp. lemon juice 1 tbsp. garlic powder 2 tbsp. nutritional yeast 1/2 cup cashews Method Soak the cashews in boiling hot water for 30 minutes and set aside. In a medium-sized pot, add the brown lentils and the vegetable broth. Give it a good stir and cover with lid. Let it simmer for 10 minutes. Add 1 cup of water. Cover with lid again and cook it for another 10 minutes. Set it aside. Prepare the Vegan Cheese Sauce: In a high-speed blender, add the cashews, nutritional yeast, garlic powder, cornstarch, miso paste, lemon juice and plant-based milk. Blend until you have a smooth and creamy consistency. For the Lentil Mixture: In a non-stick pan, sauté the onion and cooked brown lentils. Season with salt and pepper to taste. Add the soy sauce, maple syrup, crushed garlic, smoked paprika, pasta sauce and Italian seasoning. Mix it well and cook it for 3 minutes. Assembly: Evenly spread the lentil mixture on the bottom of your casserole dish (we're using a 17 cm x 17 cm x 6 cm casserole dish for this video). Pour half of vegan cheese sauce and layer the tater tots on top (we used store-bought ones but you can also use homemade tater tots for this recipe). Add the rest of the vegan cheese sauce and top it with grated vegan cheese if you prefer (optional). Sprinkle more Italian seasoning and bake in the oven for 15-18 minutes at 200 degrees Celsius. Let it cool for 10 minutes before slicing and serving. Enjoy! *Feel free to adjust the recipe measurements according to your preference.
