Today I share with you a Moroccan recipe of kefta&eggs tagine, a quick, easy and super tasty recipe to be shared with your family and friends! SHARE, COMMENT AND LIKE THE VIDEO! Moroccan tagine kefta with eggs Ingredients for the kefta and sauce: • 1 finely chopped garlic clove (for the mince meat) • ½ tsp of ginger paste • 1 finely chopped red chilli • 3 finely chopped garlic cloves (for the sauce) • 1 tsp ginger paste (for the sauce) • 1 finely chopped onion (for the mince meat) • 1 tbsp tomato paste • 3 tbsp finely chopped parsley • 3 tbsp finely chopped coriander • 1 big chopped onion (for the sauce) • 1 tin (400g) plum tomatoes (blended) • 1 ½ tsp of salt • 1 tsp of black pepper • 2 tsp of paprika • 1 tsp of turmeric • 1 ½ tsp of cumin powder • ¼ tsp of cinnamon • ¼ tsp of chilli powder • 2 tbsp of olive oil • 500g minced meat Method: 1. in a bowl mix the ground meat, finely chopped onion, 3 tsp of finely chopped parsley, 3 ½ tsp of finely chopped coriander, 1 finely chopped garlic clove, ½ tsp ginger paste, ½ tsp of salt, ½ tsp of black pepper, ½ tsp of turmeric, 1 tsp of paprika, ¼ tsp of chilli powder, 1 tsp of cumin powder, ¼ tsp of cinnamon 2. Shape the kefta mixture into small meatballs and set aside. 3. Heat 2 tbsp of olive oil in the tagine (or a large pan) over medium heat. 4. Add the onions and stir the cover the tagine and leave to cook few minutes. 5. Remove the lid and stir the onions until translucent, then add 3 finely chopped garlic cloves and 1 tsp of ginger paste and stir well. 6. Add the finely chopped red chilli and stir. 7. Cover the tagine and cook few minutes. 8. Remove the lid and add 1 tsp of salt, ½ tsp of black pepper, 1 tsp of paprika, ½ tsp of turmeric, ½ tsp of cumin powder, 2 tsp of finely chopped parsley, 2 tsp of finely chopped coriander, 1 tbsp of tomato paste and mix all the ingredients together a few minutes 9. Pour over the tomato sauce. 10. Mix everything well a few minutes. 11. Cover and leave to cook 10 minutes. 12. Remove the lid 13. Mix the sauce (the sauce should be thick) 14. Add the meat balls into the sauce 15. Cover and cook for 10 minutes 16. After 10 minutes mix the meat balls so it cooks evenly on both sides 17. Cover and cook for 5 minutes 18. Remove the lid and add 3 whole eggs 19. Cover and cook for another 5 minutes 20. After 5 minutes turn off the heat, remove the lid and check the eggs are cooked to your liking 21. Sprinkle finely chopped parsley over the cooked tagine The kefta is very moist and the sauce is full of flavours, this dish is very popular in Morocco and it is served with homemade bread. Enjoy!
